How to Make a Delicious James Martin Chicken and Mushroom Pie

Ingredients

For the pie crust:

  • 2 cups all-purpose flour, plus more for dusting
  • 1/4 teaspoon salt
  • 1 cup chilled unsalted butter, cut into small cubes
  • 1/4 cup ice water

For the filling:

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 1 celery stalk, chopped
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 ounces cremini mushrooms, sliced
  • 3 tablespoons chopped fresh thyme leaves
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • Salt and pepper to taste

Instructions

Make the pie crust

  1. In a large bowl, whisk together the flour and salt. Add the butter and use your fingers to work it into the flour until it resembles coarse crumbs.
  2. Add the ice water 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375 degrees F (190 degrees C).

Make the filling

  1. Heat the vegetable oil in a large skillet over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Add the chicken and cook until browned on all sides.
  3. Add the mushrooms and thyme and cook until the mushrooms are softened, about 5 minutes.
  1. Sprinkle the flour over the vegetables and cook for 1 minute.
  2. Gradually whisk in the chicken broth and milk until the sauce thickens.
  3. Season with salt and pepper to taste.

Assemble the pie

  1. On a lightly floured surface, roll out the dough to a 12-inch circle.
  2. Transfer the dough to a 9-inch pie plate and trim the edges.
  3. Add the filling to the pie crust.
  1. Roll out the remaining dough to an 11-inch circle.
  2. Cut the dough into 1-inch wide strips.
  3. Weave the strips over the filling, forming a lattice crust.
  1. Brush the crust with milk and sprinkle with salt.
  2. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  3. Let the pie cool for 10 minutes before serving.

Tips

  • For a richer flavor, use dark meat chicken instead of white meat.
  • Add a splash of white wine to the filling for extra depth of flavor.
  • If you don't have time to make your own pie crust, you can use a store-bought one.
  • Serve the pie warm with a side of mashed potatoes or roasted vegetables.
